The Spanish Cheesecake or "Quesada Pasiega".

We inaugurate the gastronomy section with a dessert from Cantabria in Spain, the Spanish Cheesecake or "Quesada Pasiega".

The Spanish Cheesecake is a typical slightly sweet flavor dessert that has the consistency of pudding and has its origin in the Pas Valley, a region of Cantabria, where towns like Selaya, Vega de Pas, Villacarriedo and Alceda-Ontaneda are located, and one of the most representative desserts of the entire community of Cantabria.

Regarding its composition, this is made from cow's curdled milk and is accompanied with butter and flour, and eggs and sugar. To give it aroma, grated lemon and cinnamon powder are used.

Finally, regarding their preparation, first, sugar and butter are mixed. Then, curdled milk is added and the mixture is then flavored with lemon and cinnamon. Subsequently beaten eggs and flour are added. Once the mixture is carried out and mushed well, it is put into cake moulds and introduced into the oven, where it is baked at 180º C for one hour until the surface starts to brown. It can be served hot or cold.
